One possibility is that dogs tilt their heads to hear sounds more clearly. By changing the position of their ears, they may be trying to pinpoint where a sound is coming from.
Many dogs also react this way when they hear familiar words such as:

Some researchers believe dogs tilt their heads because they’re paying close attention and trying to understand what their owners are saying.
Another theory suggests that dogs with longer snouts may tilt their heads to improve their view of a person’s face. The movement could help them better read facial expressions and body language.
